This soup mixes fresh vegetables with leftover roasted potatoes for a rich and creamy soup with minimal fat. There's no cream or butter!! Everything is made in the Vita-Mix.

Summer Squash & Roaster Red Potato Soup: Vita Mix
1-1/2 lbs. Summer Squash chopped
1 small sprig of Celery
5 Baby Carrots
Leftover Roasted Red Skin Potatoes
(Roasted with Sea Salt, Cracked Black Pepper, Garlic, Parsley & Olive Oil)
Pinch of Ginger
1/4 tsp. Nutmeg
Black Pepper to taste
3 cups + water
After the container is filled with vegetables, add water to about 1-1/2" below the top. See the photo of the raw vegetables in the container.
Zap all of the ingredients on High for 3 minutes.
Add 2 heaping tablespoons of Greek Yogurt
Zap for an additional 2 minutes on High
Recipe Tip: Serve with Greek Yogurt, Red Pepper Flakes and/or Toasted Pumpkin Seeds.
