This soup is a new favorite. It's so smooth & easy. The hubby ate the leftovers before I knew they were missing. He likes it with a dash of hot sauce.
Serve warm or cold with a dolop of Greek Yogurt

Spinach & Avacado Silk Soup (Vita Mix)
Step 1:
Create your own instant vegetable broth
3 cups of water
4 or 5 baby carrots
1 Celary stalk with leaves
Sprig of Parsley
Pinch of Garlic
Pinch of Kosher Salt
Pinch of Ground Black Pepper
Zap for 3 minutes on high until warm and liquified
Step 2:
Add the following to the broth
1 peeled and pitted Avacado
Juice of 1/2 Lemon
3 Hands Full of Spinach
2 heaping spoons of Greek Yogurt
Zap for 2 to 3 minutes until silky smooth and warm
